Galactic Merger
A favorite hop combination for us has to be Citra and Galaxy, also known as Thunder and Lightning, or maybe they’re only known as that to us? These two hops come together and create mouthwatering notes of Citra, Peach and Passion Fruit. A liquid feast fit for a queen or king!
Galactic Merger from Spyglass Brewing is one such Double IPA loaded with Citra and Galaxy, added both in the whirlpool and the dry-hopping process. The result is a fantastically crafted Double IPA that is truly out of this world.
Name Please
Co-founder John Wagner gave us a little insight about the naming of the beer. Galactic Merger is just the Double IPA version of one of their most popular IPAs called Binary Stars. The name stems from the term for actual stars that orbit each other. Binary Stars the beer was created by John a few years ago to show off two “Star” hops, Citra and Galaxy.
While John may have created the original Binary Stars IPA, it was production director and head brewer Isaac Boucher who created the recipe for Galactic Merger.
Starstruck
This beer absolutely pops! Galactic Merger is one of the best IPAs of any variety that we’ve had the pleasure of trying this year. Yes, we know there are many, many IPAs with the exact same hop combination and same style of beer, but Galactic Merger has the wow factor!
Exquisite palate-pleasing notes of citrus come on strong up front but give way to subtle hints of tangy fruit and a little bitterness on the end. This is one you have to be careful with or you will wind up drinking it too fast, and then you won’t have any left!
As you can see in the picture above, this is a beautiful, full bodied beer that’s packed full of juicy flavor. Binary Stars is brewed year-round and John stated that they will probably start brewing Galactic Merger as a year-round beer as well. That bodes extremely well for you fine folks who are in the vicinity.
The End Result
We don’t offer ratings at PorchDrinking, but we will again state that this beer is near the top of the list. That list being some of the best beers we’ve had the privilege of trying this year. If you happen to be in their area, do yourself a favor and pay them a visit. Don’t just check out Galactic Merger though, be sure to sample many more of their fine craft beers.
