When I was a greenhorn to the craft beer scene; I became the guy at beer shares who would bring accouterments in the form of fancy cheeses and cucumber/lime water. The flavored water ultimately served as the ultimate palate cleanser for event guests seeking to brush their weary tongues after too many barleywines and imperial stouts. Some people would even tell me they would come to a beer share or my homebrew club hearing cucumber/lime water would be there. Emerald Splash Cucumber Lime Saison is the result of people asking me to elevate that beverage to the next level.

I don’t mean to be dramatic, but I think they’ve named this beer wrong. With a name like, “Drama Queen”, you’d expect this 8.3% barrel-aged saison to be too boozy, quick to fly off the handle with overly pronounced flavors. No, she is far too balanced to be called a drama queen.

It’s not easy to stand out in Seattle’s booming craft beer scene, but Holy Mountain Brewing Company has made a name for themselves with their focus on mixed-fermentation ales. Though they brew a wide variety of styles, Holy Mountain’s farmhouse ales have quickly earned the brewery a cult following. The tasting room is regularly packed and Holy Mountain’s well-known saisons and barrel-aged brews have become favorites at bottle shares around the country. In honor of their success, I’d like to introduce you to the beer they describe as “possibly our most traditional saison to date,” Witchfinder.

The sun shined brightly on a Sunday afternoon as my girlfriend and I cruised lazily the back streets of Chicago. Through some force of nature, we happened upon the Goose Island Fulton Taproom. Suddenly, those same forces guided us to a parking spot. As we opened the door, we were greeted by kind, soft and welcoming faces. Looking around inside, our DIY intuitions were stirred by the hand-made, Chicago-themed woodwork covering the walls. My eyes were drawn to a wooden barrel repurposed into a water dispenser. What a brilliant idea!

The Beatitude series of Saisons by Council Brewing Company is kind of a thing in San Diego. That is to say that the fruity Saisons pop up in various kegs and bottles throughout the city with a distinct notoriety and a high demand. This beer has existed, to be exact, in Mosaic dry-hopped, Citra dry-hopped, raspberry, apricot, passion fruit, cherry, three berry, pineapple, blueberry and, of course, mango versions, all of which are bottle-conditioned. We discovered the Beatitude Mango fresh on tap when we visited the brewery location.

Paisley is a beer from Funkwerks’ experimental series, packaged in a bright Paisley-decorated bottle that could have come from Pier 1 Imports rather than the liquor store. We were excited to try our first Funkwerks wild ale and popped it open with some anticipation. The beer poured into the glass a hazy golden orange color with delicate lacing. At first whiff there was a strong barnyard smell that immediately transitioned to tropical flavors including apricot, cherry, and spicy passion fruit aided by the Funkwerks’ house yeast strain.
